Information will include benefits when milk protein concentrates and isolates (MPCs and MPIs) are used in these reading to drink beverages.

These functional MPC and MPI milk proteins address storage stability issues and eliminate the need for sodium hexametaphosphate (SHMP). Idaho Milk Products notes its IdaPro and IdaPlus milk proteins have a blander flavor profile, higher solubility, and faster hydration and dispersion rates than other MPCs and MPIs. As a result, fewer stabilizers and flavor masking agents are required. Drinks with a longer shelf-life and less grittiness and sedimentation result.

Speaker Biographies:

Dr. Chenchaiah Marella, Vice President, Research and Product Development, Idaho Milk Products
Chenchaiah Marella, Ph.D., joined the Idaho Milk Products team in 2014 as Vice President of R&D with over 20 years’ experience in dairy science and technology. Marella is responsible for new product development, product research, evaluation of new technologies, coordinating scale-up of new products, management of University collaborations, intellectual property development and everyday management of department staff and laboratories.

He came to Idaho Milk Products from California Polytechnic State University, as Leprino Foods Chair in dairy products technology. Previously he was the Manager of the Institute of Dairy Ingredient Processing in the dairy science department at South Dakota State.

Marella received his B.Sc. in Dairy Technology (ANGR Agricultural University, India), MSc degree in Dairy Engineering (Gujarat Agricultural University, India) and a Ph.D. in Agricultural & Biosystems Engineering (South Dakota State University).

Dr. David Clark, Owner and Managing Director, Bovina Mountain Consulting LLC
David Clark, Ph.D., founded the consultancy company, Bovina Mountain Consulting LLC, which specializes in the nutritional and functional aspects of dairy ingredients in high value markets. He has a tremendous knowledge in strategy development, regulatory support, new product development, infant and medical nutrition formulation support, and market research assistance.

He has over 30 years of experience in the dairy industry and held senior and executive positions at DMV and Friesland Campina. He is the author of over 100 peer-reviewed publications on dairy ingredients, and has worked with clients in the US, Europe, and Asia.

Clark has a B.Sc. in Biochemistry and received his Ph.D. from National Institute for Medical Research in London, U.K.
