Speaker: Sharon Herzog, MS, Director of R&D, Country Choice Organic

Sharon Herzog, MS, is Director of R&D with Country Choice Organic. Cookies and hot cereals including the Fit Kids™ brand of instant oatmeal. All products are Oregon Tilth Certified Organic under USDA regulations and  certified kosher by the Orthodox Union.  Beside product formulation and development responsibilities,  Sharon’s additional activities include monitoring and commenting on ingredients appearing in the USDA’s National Organic Standards Board’s National List.

Past positions include Director of R&D at Quali Tech, Senior Food Scientist at Food Technologies and six years as Research Food Scientist at General Mills. Sharon is a member of the Institute of Food Technologists and the Organic Trade Association. She has an MS in Food Science and Nutrition from the University of Minnesota and a BS in Biology and Chemistry from the University of Wisconsin-River Falls

A multitude of challenges present themselves in the development of traditional processed, packaged foods and beverages. When the goal is to formulate a product with organic components, the “tool chest” of functional ingredients narrows rapidly as one moves to organic-compatible, certified organic and even non-GMO certified ingredients. How do these ingredient categories different and what are some formulation strategies to create successful consumer-friendly products?
